Easy Cheesy Pasta

This is a super simple and delicious recipe. You can make it the easy way or add whatever extras you like.

B has a rare condition called Galactosaemia which means his body can’t break down the galactose sugar found in all milks from mammals. The thing is he can have Parmesan, mature and vintage cheddars as the galactose has been removed in the process so we always use these when cooking. We use soy milk too so we all have the same meal. There is no way I am making more washing up if I don’t have too. Obviously you can choose what ever you want but flavours and quantities may vary slightly just give it a go and see what happens.

This serves my greedy family of 4. So reduce quantities if you want a smaller portion.


  • Cheese approx 200g
  • Parmesan approx 50 g
  • 2 large eggs
  • 4 Tbsp of Milk
  • Pasta 500g


  1. Cook your pasta as directed
  2. Mix eggs, cheeses and milk in a bowl.
  3. When cooked drain pasta and return to the hob on a low heat and add the egg, cheese and milk mix
  4. Stir for a few minutes while cheese melts and it heats up.
  5. Scoop into a bowl and demolish.

I never measure really when cooking and just eyeball it and go with what my belly wants. If I’m aiming to be healthier I use less cheese and add a ton of veg to the side. So if you think it needs a little more milk add some, more cheese go for it. Feeling like you want to add some chorizo to make it extra filthy do it there is no judgement here.
